Raw corn must undergo numerous processing steps in corn processing machinery to produce finished products, as each step involves different forms of processing. Ensuring the effectiveness of these steps is crucial to maintaining product quality. However, with so many steps involved, what techniques can be employed to guarantee product quality?
First, the corn kernels used as raw material must undergo a cleaning process. Select reliable yellow corn that is free from mould, insect damage, and odours as raw material. Pour it into a clean, shallow basin, spread it out, and manually sort it. Remove the corn husks, corn cobs, hard corn stalks, sand, stones, mud clumps, and other impurities, leaving only clean corn kernels for use. The impurity content of the sorted corn raw material must not exceed 3%.
The de-husked corn kernels are rinsed with clean water 3–5 times, ensuring thorough cleaning without excessive rubbing to prevent excessive starch loss. Any impurities appearing during washing must be promptly removed. Washing continues until the basin water becomes clear. The washed corn kernels are placed in a shallow container, spread out, and sun-dried until the surface is mostly dry.
Place the sun-dried corn kernels in a dryer for further drying. Turn on the dryer, set the temperature to 110°C, and dry for 7–8 minutes. The dried corn kernels should be loose, not clumped together, and not burnt or yellowed.
Then, place the processed corn kernels into a grinder for grinding and milling. The resulting corn flour has a particle size ranging from 60–200 mesh, with a moisture content of approximately 20%. The fineness of the corn flour should be adjusted according to the type of corn-based food being produced: flour with a particle size below 100 mesh is suitable for corn porridge and corn paste for adults; ultra-fine flour with a mesh size of 200 or above has a smooth texture and is suitable for infant nutritional porridge; commonly used corn flour has a mesh size of approximately 120–150, which can be used to make vermicelli, starch sheets, rice crackers, instant noodles, etc.
