When the moisture of corn is 20%, the efficiency of peeling and degerming is high, but the moisture of the finished product is high. The more suitable processing moisture is 16% to 17%. Improve the efficiency of peeling and germ removal.

two:Temperature and time:

Water temperature is the main factor affecting the water absorption of corn kernels and embryos.

Different air and water adjustment methods are used when the air temperature is different. When the normal water temperature is above 20℃, only water adjustment is used instead of steam adjustment to save energy. When the water temperature is low, water and steam adjustment should be used at the same time.

The corn needs to be moistened for a period of time to make the embryo absorb water and swell, enhancing toughness and elasticity. However, if the corn is moistened for too long, the water will penetrate into the endosperm. The moisture difference between the skin and the endosperm is too small or the moisture of the skin is lower than the endosperm. It will cause difficulty in peeling; if the time is too short, the embryo will not absorb water enough, the embryo body will swell less, and the embryo will be easily damaged during processing, and the efficiency of degerming will be significantly reduced. The moistening time of corn is generally about ten minutes.
