The skin should be peeled before degerming. Because the germ and endosperm are covered by the cortex, the germ and endosperm are easy to separate after peeling.

At the same time of degerming, the kernels are broken into large, medium and small particles. These particles are processed into corn mash and corn flour with lower fat content.

In peeling and degerming of corn, it is required to reduce excessive fragmentation of the endosperm. The germ must be kept intact, and the number of whole corn, large pieces and flour should be minimized. The peeling and degerming efficiency is above 90%.
